There is something quietly welcoming about serving dessert directly from the parchment.
This apple-thyme galette has the character of a handmade dessert without the precision required for a traditional pie. Salted honey gives it just enough polish for a relaxed dinner at home.
APPLE-THYME GALETTE WITH SALTED HONEY
Serves 6 | Approximately 50 minutes
INGREDIENTS
• 1 refrigerated all-butter pie crust
• 3 firm apples, such as Honeycrisp or Granny Smith
• 1½ tablespoons lemon juice
• ⅓ cup granulated sugar
• 1 tablespoon all-purpose flour
• ½ teaspoon ground cinnamon
• 1 teaspoon fresh thyme leaves
• 1 tablespoon unsalted butter, cut into small pieces
• 1 egg, beaten
• 1 tablespoon coarse sugar
• 2 tablespoons honey
• ¼ teaspoon flaky sea salt
DIRECTIONS
1. Heat the oven to 400°F. Line a baking sheet with parchment paper.
2. Core and thinly slice the apples. Toss with lemon juice, granulated sugar, flour, cinnamon and thyme.
3. Unroll the pie crust onto the baking sheet.
4. Arrange the apples in the center, leaving a two-inch border.
5. Fold the pastry over the fruit, pleating the edge naturally. Dot the apples with butter.
6. Brush the pastry with beaten egg and sprinkle with coarse sugar.
7. Bake for 35 to 40 minutes, until the pastry is golden and the apples are tender.
8. Warm the honey, stir in the flaky salt and drizzle it over the galette.
Serve warm with vanilla ice cream, crème fraîche or softly whipped cream.
Save this for the first cool weekend that calls for something from the oven.
