📚🎉 BACK TO SCHOOL BASH IS ALMOST HERE! 🎉📚

Airport Road MHC is excited to welcome everyone to our Back to School Bash on Saturday, August 8th, from 2:00 PM–5:00 PM! 🚌✏️🎒

🍽️ Here's an easy recipe for our Airport Road MHC residents!

🌮Looking for a simple, delicious dinner the whole family will love? Give these Easy Cheesy Chicken Enchiladas a try!

Directions:

Preheat your oven to 375°F.

Heat the olive oil in a skillet over medium heat. Sauté the chopped onion for 3–4 minutes until softened. Add the garlic and cook for another 30 seconds.
Stir in the shredded chicken, diced green chilies, cumin, chili powder, salt, pepper, and about ½ cup of the enchilada sauce. Mix until heated through.

Spread a thin layer of enchilada sauce in the bottom of a 9x13-inch baking dish.
Fill each tortilla with the chicken mixture and a little Monterey Jack and cheddar cheese. Roll up and place seam-side down in the baking dish.

Pour the remaining enchilada sauce over the enchiladas and top with the remaining cheese.
Bake for 20–25 minutes, or until the cheese is melted and bubbly.

Let cool for 5 minutes, then garnish with fresh cilantro and green onions. Serve with sour cream and guacamole if desired.
