Sent my whole family to Pocatello without me.

Husband. Both sons. Daughter-in-law. Granddaughter. All of them. I was at cheer with Harper so they loaded up and left without a second thought.

And seriously-good for them!

One text came through about an hour later: “Worth. The. Drive.”

That’s it. No photos. No details. Just that.

Dunk Burger is a pop-up food truck in Old Town Pocatello-they announce it on social media, you show up, you wait, you order at the window. The burger is smashed, loaded with cheese sauce, wrapped in foil. They even make their own crinkle chips. You eat in your car like you’re 17 and it is life changing.

We’ve been before and it earns the hype every single time.

Pocatello is an hour from Idaho Falls and I think we seriously sleep on that city. Adding this one on the East Idaho road trip list now.

Full disclosure-I’ve seen Shoshone Falls roaring after a heavy snow season and it will absolutely take your breath away.

This year? We’re in a drought. The water is low. And honestly… it’s still stunning.

That’s how you know a place is special-it’s beautiful even on its worst day.

Shoshone Falls drops 212 feet-36 feet taller than Niagara-and whether it’s a trickle or a torrent, standing at the edge of that canyon never gets old. I’ve lived in this area most of my life and it still stops me.

Spring runoff is usually peak season, but if you haven’t been this year don’t let the drought stop you. Go anyway. The canyon alone is worth the drive.

Okay, if Idaho Falls had its own little award show…these would be a few of my winners 🏆

A mix of go-to favorites and a few that feel a little under-the-radar...but all of them are places I find myself going back to again and again.

That’s one of my favorite things about living here…there’s always a spot that just fits whatever kind of day you’re having.

But I know I’m missing some good ones.
