Did you know that it is National Ginger Bread Day. So I will share a great ginger bread recipe I know.

½ cup of unsalted butter.
½ cup of sugar
1 large egg
1 cup molasses
2 ½ cups all purpose flour
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon cloves
½ teaspoon sale
1 cup of hot water.

Preheat the oven to 350 degrees F or 175 degrees C
Grease and line a 9 in square baking pan with parchment.
Beat butter in a large bowl until creamy
Add sugar and beat until light and fluffy
Add egg and molasses beat until smooth.
Sift in flour baking soda, spices and salt into a separate bowl.
Gradually add in flour mixture to the butter mixture and beat to combine.
Pour into the baking pan.
Place in the oven for 30 minutes or until a toothpick can be inserted and removed clean.
Let cool before serving.

While this version is not gluten, diabetes, or vegan safe. Feel free to substitute non dairy, egg free or sugar alternatives to make the recipe fit your dietary restrictions.
