You spent months preparing. Countless weeks were dedicated to planning and shopping for that perfect gift. “Oh the weather outside is frightful….” well, maybe that’s a slight exaggeration but if next week’s forecast is accurate, it WILL BE a great time to whip up a batch of healthy, hearty, and delicious turkey chili. The recipe includes sweet corn which adds tremendous flavor and contrary to popular belief, is NOT bad for you (see the link below: 5 Myths about Corn You Should Stop Believing).

SIMPLE TURKEY CHILI

INGREDIENTS:

1 ½ teaspoons olive oil
1 pound ground turkey
1 onion, chopped
1 cup of water
1 can of Rotel
1 (28 ounce) can crushed tomatoes
1 (16 ounce) can black beans (or any you prefer) – drained, rinsed
1 tablespoon garlic, minced
2 tablespoons chili powder
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground black pepper
1 package frozen sweet corn

DIRECTIONS:

1. Heat the oil in a large pot over medium heat. Place turkey in the pot and cook until evenly browned. Stir in onion and cook until tender.
2. Pour water and Rotel into the pot. Mix in tomatoes, beans, corn, and garlic. Season with chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover and simmer 30 minutes.

Lately, my sister and I have been on a quesadilla kick made with Food for Life brown rice tortillas. They’re amazingly tasty and crisp up nicely when heated in the oven (or any type of countertop grilling gizmo).

Why RICE tortillas rather than the good old, familiar white flour or whole wheat tortillas? The simple answer is that wheat has become a problem for many, many people. In fact, if you often feel sluggish or bloated, try eliminating wheat from your diet for two weeks. I’m willing to bet you’ll feel a whole lot better! (Other negative effects of wheat consumption include gluten intolerance, weight gain, blood sugar spikes, and the onset of autoimmune conditions.)

Rice tortillas are a scrumptious alternative to tortillas that are made with white flour (equally as bad as refined sugars) or wheat. Add raw baby spinach, cooked chicken, refried or black beans, cheese, avocado, and you’ll have a quick and healthy meal. Trust me. They’re delish! (Would I lead you astray?)

Tip: Although we can’t currently buy Food for Life Rice Tortillas here in Jonesboro (but we’re hoping the new Kroger will carry them), you can buy them at Whole Foods in Memphis (and other cities) and order them online directly from the Food for Life website:
