New on our books in North Kihei: Kealia 608, on the top floor.

It is a one-bedroom on the sixth floor, with Kealia Pond in the windows as you walk in and the ocean from the private lanai. There is a full kitchen with full-size appliances, air conditioning in the living room, ceiling fans throughout, and a private washer and dryer, so a two-week or month-long stay is easy. There is covered parking in the garage and an elevator straight up.

From mid-December to mid-April, the lanai is where you watch for the humpbacks.

Hoʻomaha is the word for a vacation, and it is also the word for a rest in music, the beat where nobody plays. That is a better definition of a holiday than most of the ones we use. When the schools break, people say ua hoʻomaha nā kula.

The point of the word is the stopping. Leave a few days of a trip with nothing planned and you will find out what it means.

This week's letter: the sky after ten, which most people on Maui never see.

This week the Orionid meteor shower peaked over the island in the small hours, and almost nobody was awake for it. A Maui holiday runs on a daytime rhythm, and most visitors go home without once looking properly at the sky.

You do not need a telescope or a tour. You need a night when the moon is down, a lanai that faces the ocean, the lights off behind you, and twenty minutes while your eyes adjust. And if the sky matters to you, plan the trip around the moon: the next new moons in Hawaii fall on November 8 and December 8, and the Geminid meteor shower peaks on the night of December 13 into 14.

It is the size that suits the most trips: two couples, a family of four or five, grandparents plus one. Twenty-one of the twenty-three have two full bathrooms, which by the third morning matters more than the second bedroom, and eighteen of them sleep six.

Day six of a trip, you want a salad. This is where.

Fork & Salad comes from the same three chef-owners as Three's Bar & Grill, and it runs on ingredients from around twenty Hawaiʻi farms and producers. Build your own on greens or grains, or pick a signature like the Paniolo: spring mix, avocado, cheddar, mushrooms, bacon, purple sweet potato and kimchi broccoli. Order ahead online and it becomes a beach picnic.

Open every day, eleven to eight in Kihei at Azeka Mauka, and half past ten to half past eight in Kahului, which is on the way in from the airport.

Since 1989, when Paia was a sleepy fishing town, and the fish is still the point.

Pick the fish, mahi mahi, ono, snapper, ahi or salmon, then pick how it is cooked: charbroiled, sautéed, Cajun or blackened. It comes with hand-cut coleslaw and tartar sauce, the seating is family style, and there are no reservations.

There are two rooms, both open every day from eleven to nine: the original on Hana Highway in Paia, and one on South Kihei Road across from Kalama Park for the nights when the North Shore is too far.

High ceilings, a lot of light, and Ma'alaea Bay out past the lanai.

Makani A Kai B-7 is a second-floor two-bedroom, up one flight with no elevator, with soaring ceilings, two split air conditioners, and a shoji door that opens the guest bedroom onto the living room by day and closes it off at night. A king in one bedroom, a queen in the other, a sofa sleeper for a sixth, and two bathrooms with walk-in showers.

At Makani A Kai there is no road between the grounds and the water. The lawn, the pool and the barbecues sit right on the bay, and Haycraft Beach Park next door is where Sugar Beach starts its long run south. From the lanai you watch the harbor boats, the paddlers and the outriggers, and in winter the humpbacks.

ʻOhana stretches wider than the English word. It takes in the cousins, the aunties who are not technically aunties, and the neighbor who has been at every birthday for twenty years. ʻOhana nui is the whole extended clan.

It is also why the best Maui trips tend to be the ones where the lanai has to fit everybody.

Two bedrooms, two baths, and the Pacific straight off a big private lanai.

Kihei Beach 302 is upgraded and tiled throughout, with a granite and stainless kitchen for the nights you would rather cook and the lanai for eating what you cooked. The main bedroom has a king, its own bathroom and a big window onto the ocean. The second has two twins and its own bath with a walk-in shower, and the sleeper sofa takes it to six. Central air, ceiling fans, and a washer and dryer inside the unit.

Kihei Beach Resort is small and quiet, with a pool and a lawn running out to the sand, and the shoreline heads north for miles toward Ma'alaea. It is the beach you walk in the morning.

Seventy-four of the seventy-four condos we manage have their own kitchen.

It changes the shape of a trip. Breakfast happens on the lanai in whatever you slept in, a cooler gets packed for the beach, and the fish from the market is cooked the night you buy it. After a week of that, a restaurant meal becomes an occasion again instead of a daily chore.
