Family Hack of the Week

September is National Honey Month, making it the perfect time to bake this Honey Vanilla Pound Cake, courtesy of Food Network. This easy recipe yields one 8-inch loaf.

Preheat your oven to 350 degrees Fahrenheit. Grease the bottom of an 8-inch loaf pan, line it with parchment paper, then grease and flour the pan.

Add 4 extra-large eggs, 2 tablespoons honey, 2 teaspoons vanilla, and 1 teaspoon grated lemon zest to a glass measuring cup; do not combine. In an electric mixer fitted with the paddle attachment, cream 1/2 pound room-temperature unsalted butter and 1 1/4 cups sugar on medium speed for 3 to 4 minutes, until light and fluffy. Reduce the speed to medium-low and add the eggs one at a time, scraping down the bowl and allowing each to incorporate before adding the next.

In a separate bowl, sift together 2 cups cake flour, 1 teaspoon kosher salt, and 1/2 teaspoon baking powder. With the mixer on low, gradually add the flour mixture until just combined. Finish mixing with a rubber spatula, then pour the batter into the prepared pan and smooth the top.

Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, then transfer to a baking rack and cool completely.
