TGIF! Meet our new favorite beach cocktail to try this weekend: The Espanto Wave! 🌊 🌊 🌊 It's the house drink at the dreamy Cayo Espanto resort in Belize, and it's got us in the mood for spring!

Here's the recipe:

In a blender, combine 2 Tbsp. (1 oz.) Captain
Morgan Spiced Rum, 1 Tbsp. (½ oz.) Blue Curaçao
Liqueur, 2 tsp. (⅓ oz.) Amaretto, 1 Tbsp. (½ oz.) Triple Sec, 2 Tbsp. (1 oz.) pineapple juice, 2 Tbsp. (1 oz.) fresh lime juice, and 1 Tbsp. sugar. With blender running, add ice cubes, one at a time, through opening in lid, until slushy. Pour mixture into a glass and garnish with a lime wedge and a maraschino cherry. 🍒
Makes 1 cocktail.

Boynton Beach was a major pineapple-growing hub in Florida, with its sandy ridge soil being ideal for pineapple cultivation in the late 19th and early 20th centuries. The industry thrived, shipping crates of fruit via the Florida East Coast Railroad, and was home to large plantations like Oscar Winchester's "Flatwoods" plantation, until a decline occurred due to factors like competition from cheap Cuban pineapples around 1910.
