Tonight’s adult beverage is what I’m calling A Lime in the Coconut! It’s a play on a Brazilian Lemonade. Takes a little time to make, but it’s delicious! Cut the ends off of two limes and slice each one into 8 sections. Place in a blender with 3 cups of cold water and blend on high for just 10 seconds. Strain the solids and return your lime water to the blender. Add 6 ozs of White Rum, 2/3 cup Cream of Coconut and 1 cup of ice and blend until frothy. Add 8-10 mint leaves and just pulse until broken down. I rimmed my glass using a swoosh of Karo syrup and dipped in a mixture of raw sugar and fresh lime zest. Add a mint sprig, lime wheel and a couple of straws and you’re all set! Enjoy!
