6 AVOCADO PROTEIN SALADS THAT ARE FRESH, FILLING AND DELICIOUS 🥑🥗
GRILLED CHICKEN AVOCADO SALAD
Ingredients:
2 grilled chicken breasts, sliced
2 ripe avocados, sliced
4 cups chopped lettuce
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/4 red onion, thinly sliced
1/2 cup creamy yogurt dressing or ranch dressing
Salt and black pepper to taste
Fresh parsley for garnish
Instructions:
Season the chicken with salt, black pepper, garlic powder and a little olive oil. Grill until golden, juicy and fully cooked. Slice the chicken and set aside.
In a large bowl, add lettuce, avocado slices, cherry tomatoes, cucumber and red onion. Place the grilled chicken on top, drizzle with creamy dressing and finish with fresh parsley.
SHRIMP AVOCADO SALAD
Ingredients:
1 lb large shrimp, peeled and deveined
2 ripe avocados, diced
4 cups mixed greens
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 cup corn
2 tablespoons olive oil
Juice of 1 lime
Salt, black pepper and paprika to taste
Fresh cilantro or parsley
Instructions:
Season the shrimp with salt, black pepper, paprika, lime juice and olive oil. Cook in a hot skillet for a few minutes until pink, juicy and lightly golden.
In a bowl, add mixed greens, avocado, cherry tomatoes, cucumber and corn. Add the shrimp on top, drizzle with extra lime juice and olive oil, then garnish with fresh herbs.
TUNA AVOCADO SALAD
Ingredients:
2 cans tuna, drained
2 ripe avocados, chopped
4 cups lettuce
1 cucumber, sliced
1 cup cherry tomatoes, halved
2 boiled eggs, sliced
2 tablespoons mayonnaise or Greek yogurt
Juice of 1 lemon
Salt and black pepper to taste
Fresh parsley
Instructions:
Mix the tuna with mayonnaise or Greek yogurt, lemon juice, salt and black pepper until creamy.
In a large bowl, add lettuce, avocado, cucumber, cherry tomatoes and boiled eggs. Place the tuna mixture in the center and finish with fresh parsley. Serve cold and fresh.
STEAK AVOCADO SALAD
Ingredients:
1 lb steak
2 ripe avocados, sliced
4 cups lettuce or mixed greens
1 cup cherry tomatoes, halved
1/4 red onion, sliced
1/2 cup roasted corn
1/4 cup crumbled cheese
3 tablespoons creamy dressing or vinaigrette
Salt, black pepper and garlic powder to taste
Instructions:
Season the steak with salt, black pepper, garlic powder and a little olive oil. Grill or sear until golden on the outside and cooked to your liking. Let it rest, then slice.
In a bowl, add lettuce, avocado, cherry tomatoes, red onion, roasted corn and crumbled cheese. Place the steak slices on top and drizzle with dressing.
EGG AND TURKEY AVOCADO SALAD
Ingredients:
2 ripe avocados, sliced
4 boiled eggs, halved
1 cup sliced turkey breast
4 cups chopped lettuce
1 cucumber, sliced
1 cup cherry tomatoes, halved
1/2 cup shredded cheese
2 tablespoons seeds
Creamy dressing to taste
Salt and black pepper to taste
Instructions:
Add lettuce to a large bowl. Arrange the avocado, boiled eggs, turkey slices, cucumber, cherry tomatoes, shredded cheese and seeds on top.
Sprinkle with salt and black pepper, then drizzle with creamy dressing. Serve immediately for a fresh and filling high-protein salad.
SALMON AVOCADO SALAD
Ingredients:
2 salmon fillets
2 ripe avocados, sliced
4 cups mixed greens
1 cucumber, sliced
1 cup cherry tomatoes, halved
1 carrot, shredded
1/4 red onion, sliced
2 tablespoons olive oil
Juice of 1 lemon
Salt, black pepper, garlic powder and paprika to taste
Sesame seeds or parsley for garnish
Instructions:
Season the salmon with salt, black pepper, garlic powder, paprika, lemon juice and olive oil. Cook in a skillet, grill or oven until golden, tender and flaky.
In a large bowl or glass container, add mixed greens, avocado, cucumber, cherry tomatoes, shredded carrot and red onion. Place the salmon on top and garnish with sesame seeds or parsley.
