🍽️ May Dinner Recipe – Lemon Garlic Chicken with Roasted Vegetables
A light, fresh, and easy spring dinner!
Ingredients:
• 4 chicken breasts
• 2 tbsp olive oil
• 3 cloves garlic (minced)
• Juice of 1 lemon
• 1 tsp Italian seasoning
• Salt & pepper
• Mixed veggies (carrots, broccoli, potatoes)
Directions:
Preheat oven to 400°F
Mix olive oil, garlic, lemon juice, and seasoning
Place chicken and veggies on a baking sheet
Drizzle with mixture and toss to coat
Bake for 25–30 minutes until chicken is cooked through
