Nearing the end of my sweet potato journey into Yamboree! Making a Sweet Potato Granola and this one was delicious!

Ingredients:

½ cup sweet potato puree
⅓ cup honey
3 tbsp olive oil
1 large egg white
3 cups rolled oats
1 tsp cinnamon
1 tsp pumpkin pie spice
¼ tsp salt

Bake at 325 degrees for 40 minutes!
