Thai Shrimp Coconut Soup (Tom Yum) 🍤🥥✨

Ingredients:
• 1 tablespoon olive oil
• 3 cloves garlic, minced
• 1 tablespoon fresh ginger, grated
• 1 stalk lemongrass, bruised and cut into 3-inch pieces
• 2-3 tablespoons red curry paste
• 4 cups chicken or seafood broth
• 1 (14 oz) can coconut milk
• 1 tablespoon fish sauce
• 1 tablespoon lime juice
• 1 teaspoon brown sugar
• 1/2 pound shrimp, peeled and deveined
• 1 cup mushrooms, sliced
• 1 small onion, thinly sliced
• Fresh cilantro, for garnish

Directions:

1️⃣ Heat olive oil in a large pot over medium heat. Add garlic, ginger, and lemongrass, and sauté for 1-2 minutes until fragrant.
2️⃣ Stir in the red curry paste and cook for 1 minute to release its flavors.
3️⃣ Pour in the broth and bring it to a simmer. Add the coconut milk, fish sauce, lime juice, and brown sugar. Stir well and simmer for 5-7 minutes.
4️⃣ Add the mushrooms, onion, and shrimp. Cook for 3-4 minutes, or until the shrimp turn pink and are cooked through.
5️⃣ Discard the lemongrass stalks and ladle the soup into bowls. Garnish with fresh cilantro and serve immediately.

Bang Bang chicken

Ingredients:
Bang Bang Sauce
▢1 cup (232 g) mayonnaise
▢½ cup (132 g) Thai sweet chili sauce
▢1 teaspoon Sriracha, or more to taste
▢2 tablespoons honey
Chicken
▢1 ½ pounds boneless skinless chicken tenderloins
▢1 cup (245 g) buttermilk
▢¾ cup (94 g) all-purpose flour
▢½ cup (64 g) cornstarch
▢1 large egg, room temperature
▢1 tablespoon Sriracha
▢½ teaspoon garlic powder
▢½ teaspoon kosher salt
▢¼ teaspoon black pepper
▢⅛ teaspoon cayenne pepper, optional
▢2 cups (216 g) panko breadcrumbs, plain
▢canola oil, for frying
▢parsley, chopped, for garnish

Instructions:
Bang Bang Sauce
In a small bowl, combine the mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Mix well and set aside.
Chicken
In a medium mixing bowl add buttermilk, flour, cornstarch, egg, sriracha, garlic powder, salt, pepper, and cayenne pepper. Whisk to combine. Add chicken tenders and toss to coat.
Add Panko to a shallow plate.
Working one piece at a time, remove the chicken from the batter, gently shaking off any excess batter. Dredge the chicken in the panko, pressing slightly to adhere. Set on a clean plate. Repeat with the remaining chicken pieces. Set aside while you heat the oil. To a large skillet, add about an inch of oil. Heat oil over medium-high heat until it reaches a temperature of 365°F.
Working in batches, being careful not to overcrowd the pan, add chicken and cook until browned (about 2-3 minutes on each side), or until the chicken reaches an internal temperature of 165°F. Repeat with the remaining chicken tenderloins, making sure the oil is 365°F before adding more chicken.
Transfer the chicken to a paper towel-lined plate to drain slightly before adding it to a serving plate.
Toss the chicken with the bang bang sauce, top with chopped parsley, and serve warm.

For the Beef Strips:

1 lb (450g) beef steak, cut into strips
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp honey or brown sugar
1 tsp garlic powder
1 tsp paprika
1 tbsp olive oil or butter
Fresh parsley, chopped (for garnish)
For the Potatoes:

3 large potatoes, cut into thick wedges
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
Instructions:
Prepare the Potatoes:

Preheat the oven to 400°F (200°C).
Toss potato wedges with olive oil, smoked paprika, garlic powder, salt, and black pepper.
Spread the wedges on a baking tray and roast for 30–40 minutes, flipping halfway through, until golden brown and crispy.
Cook the Beef:

2 tbsp olive oil

Salt and black pepper, to taste
For the Garlic Butter:

3 tbsp unsalted butter, melted
3 garlic cloves, minced
1 tbsp fresh parsley, chopped
Instructions:

1️⃣ Season the Steak Bites:

Toss the steak cubes with olive oil, garlic powder, paprika, salt, and pepper, ensuring they’re evenly coated.
2️⃣ Sear the Steak Bites:

Heat a skillet over medium-high heat. Add the seasoned steak bites and sear for 2–3 minutes per side, ensuring a golden crust forms. Do this in batches if necessary to avoid overcrowding the pan. Remove from the skillet and set aside.

2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon cayenne pepper (optional for heat)
1 tablespoon brown sugar
For the Chicken Wings
2 pounds chicken wings, split and tips removed
1 tablespoon olive oil
For the Glaze
½ cup honey
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon sriracha (optional for heat)
🍽 Directions
Step 1: Preheat the Oven
1️⃣ Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Spray the rack with nonstick spray to prevent sticking.

We always have feta cheese at home, the one soaked in olive oil.
Lets try an exciting twist on classic avocado toast, featuring creamy feta, sweet cranberries, and crunchy walnuts for a flavor-packed breakfast.
Ingredients:
2 ripe avocados – halved and pitted
2-4 slices of your favorite sourdough bread – toasted.
1 cup cherry tomatoes – halved
1/2 cup feta cheese
1/4 cup dried cranberries – chopped
1/4 cup walnuts – chopped
Salt and pepper – to taste
1-2 tsp lemon juice – for added flavor
Fresh herbs (optional) – like parsley or basil, for garnish.
Instructions:
1. Prepare the Avocado:
In a bowl, scoop out the avocado flesh and mash it with a fork or just sliced it to your preference. Mix in or drizzle the lemon juice, salt, and pepper to taste.
2. Toast the Sourdough Bread slices to your desired level of crispiness.
3. Spread the mashed or sliced avocado generously over each slice of toasted bread and Top with the Fresh Ingredients,

Marinated Greek Lamb Chops with Mushrooms and Tomatoes🍋🥩
Ingredients:
1 Rack of Lamb (8 to 9 single rib lamb chops)
1/3 cup olive oil
4 garlic cloves, crushed
juice of 1 lemon
2 tbsp fresh oregano or 2 tsp dry oregano
dash of salt and pepper
portabella mushrooms, thinly sliced
tomatoes, sliced
green onion, sliced
lemon slices for garnish
Directions:
Pat dry Rack of Lamb and slice into individual chops, removing some of the fat.
Mix all of the marinade ingredients and rub it into the meat on all sides.
Marinate chops covered in a deep dish for an hour to overnight.
Pre-heat a cast-iron/stainless steel pan over high heat.
Once hot, add 2 tablespoons olive oil.
Place the lamb chops in the hot pan then sear for 3 to 4 minutes per side until golden brown.
Flip, add sliced mushrooms, and cook until the desired doneness.
Add tomatoes and the rest of marinade during the last minute.
Once done, transfer the chops to a plate and let them rest for 5 to 10 minutes.
Garnish with lemon slices, sliced green onion, and oregano.

1-2 sprigs of fresh thyme (optional) 🌿
2 cloves garlic, smashed (optional) 🧄
2 tbsp unsalted butter 🧈
🍴 Step-by-Step Instructions:
1️⃣ Prepare the Steak:
Remove the A5 Wagyu steaks from the refrigerator 30-45 minutes before cooking to allow them to reach room temperature. This ensures even cooking.
Season both sides of the steaks generously with sea salt and freshly ground black pepper.
2️⃣ Preheat the Pan:
Heat a heavy-bottomed skillet (preferably cast iron) over medium-high heat. Let it get very hot to sear the steak properly.
3️⃣ Sear the Steak:
Add the vegetable oil or clarified butter to the skillet. Once the oil is hot and shimmering, place the steaks in the pan.
Sear for 1-2 minutes on the first side until a rich, golden-brown crust forms. Flip the steaks and sear the other side for another 1-2 minutes.
Optionally, add the fresh thyme and smashed garlic to the pan for extra aroma and flavor.
4️⃣ Add Butter for Flavor:
Reduce the heat to medium-low. Add the unsalted butter to the pan and allow it to melt, swirling it around the steak.
