A small garage project became something that helps make whiskey more personal.

While Dave Astorga, the owner of Bar Toast, was in Louisville, we sat down for a conversation about his journey, the relationships he’s built and how Bar Toast creates products that personalize the whiskey experience.

This one goes beyond the glass. It’s about connection, creativity and the moments that happen when good people share a pour.

Huge shout out to Nikki Armento for opening up the Onyx & Amber tasting room for us to record this conversation. After experiencing Onyx & Amber for the first time, I’m officially hooked. It’s one of those whiskey experiences that words honestly don’t do justice. The room, the pours and the whole feel of it made me a fan before I even left.

New episode of Kentucky’s Wandering Realtor with Dave Astorga of Bar Toast coming soon.

What makes a whiskey experience memorable to you: the pour, the people or the story behind it?

Your words can leave a mark that an apology can't fully erase. Dawne Gee learned that as a mother.
In this clip, she shares one of the most powerful illustrations from our entire conversation—and it applies to every parent, leader, partner, and person who has ever spoken without thinking first.
This one will make you pause before you speak.

Dawne Gee doesn't serve others to be recognized. She does it because she believes it's her duty.
In this clip, she shares the philosophy that has shaped her entire life: what you've been given should determine how you show up for others.
This is why her impact reaches so much further than television.

Everyone knows Dawne Gee shows up for Louisville. But who shows up for her?
In this moment, we step past the anchor desk and meet the woman behind the role, someone who has needed support just like the rest of us.
Dawne gets candid about the people she leans on and what real community looks like when the cameras aren't rolling.

Dawne Gee loves Louisville deeply, but she won't pretend it doesn't have work to do.
She opens up about the festivals, the community, and the moments that make this city feel like home. And then she gets honest about the one truth Louisville still hasn't fully faced: how divided we can be.
Real love means being real. That's what made this one of the most memorable moments in the episode.

People often assume altitude is the secret behind Colorado aged whiskey.
Nikki Armento explains why the larger story involves dramatic barometric pressure swings and extremely dry air. Rapid weather changes move whiskey in and out of the barrel wood more frequently, while the dry climate allows more water to escape and leaves behind a greater concentration of flavor.
That process helps create the richness, viscosity, and depth found in Onyx & Amber.
As Director of Kentucky Whiskey Operations and Experiences, Nikki helps connect what happens inside those Colorado barrels to what guests discover during the brand’s private Louisville experiences.

An older age statement may sound more impressive, but it does not automatically mean the whiskey inside the bottle is better.
Nikki Armento explains why balance, barrel influence, environment, and timing matter more than simply allowing whiskey to age for as long as possible.
That belief also connects to the philosophy behind Onyx & Amber. The goal is not to release something because it has reached a certain number. The whiskey tells the team when it is ready, not the other way around.
Do you usually associate an older age statement with better whiskey?
