Let the good times roll… ✨

Dear New Orleans,

I came for the music, but stayed for the magic.

For the rhythm that spills out of every doorway…
For the cocktails that taste like stories…
For the kind of nights that turn into mornings without asking permission.

I wandered through streets where history hums under your feet,
danced in the rain like it was part of the plan,
and learned that in this city, you don’t just visit—you feel.

There’s something about you…
A little wild, a little soulful, a little indulgent—
the kind of place that reminds you how to live fully, laugh loudly,
and say yes just a little more often.

So here’s to jazz drifting through the air,
to muddy boots and pretty dresses,
to dinners that turn into memories,
and to every unexpected moment in between.

Yummmmm Crispy chicken cutlets, golden and light, topped with a bright, juicy tomato bruschetta.

Lunch, inspired by insta 🤍

I’ve been leaning into simple, high-protein meals lately—nothing overly complicated, just simple and fresh.

Today it was a low-carb tortilla pressed with ground chicken and crisped up in the air fryer (so easy, so satisfying). Topped it with air fried zucchini and paired it with a fresh arugula salad with a light vinaigrette. No pots. No pans. Just the air fryer!

It’s the kind of meal that feels balanced without trying too hard—protein, greens, a little crunch, a lot of flavor.

No recipe, no overthinking. Just cooking by feel… again.

There’s something about simple cooking that always brings me back to myself.

A roast of some sort in the oven, potatoes soaking up all the lemony goodness, the aroma floating through our home, sunlight pouring into the kitchen…
even on days when the weather can’t quite make up its mind.

I’m embracing the weather, these in-between days where mother natures been rather mercurial. One day feels like winter, a few days later it feels like spring. I don’t mind it.
It makes these cozy, sun-filled moments feel even better.

🍋Springy Lemony Chicken Salad 🥗

Ingredients

For the Chicken Marinade:
• 2 boneless, skinless chicken breasts
• ½ cup Greek yogurt
• 1 tbsp olive oil
• Zest of 1 lemon
• Juice of ½–1 lemon
• 1 tbsp fresh dill, chopped
• 1 tbsp fresh parsley, chopped
• 1 tsp salt
• ½ tsp black pepper



For the Salad:
• 2 cups romaine, chopped
• ½ cucumber, diced
• ½ cup cherry tomatoes, halved
• 1 tbsp fresh dill, chopped
• 1 tbsp fresh parsley, chopped



Simple Dressing:
• Juice of ½ lemon
• 1–2 tbsp olive oil
• Salt + pepper to taste



👩‍🍳 Instructions

1. Marinate the Chicken
• In a bowl, mix yogurt, olive oil, lemon zest, lemon juice, dill, parsley, salt, and pepper.
• Add chicken and coat well.
• Let marinate at least 30 minutes (or up to 24 hours for deeper flavor).



2. Roast + Broil
• Preheat oven to 400°F
• Place chicken on a lined baking sheet
• Roast for ~20 minutes until cooked through
• Finish under the broiler (1–2 minutes) for a light golden top

👉 Let it rest, then cube into bite-sized pieces



3. Build the Salad
• In a bowl, combine romaine, cucumber, tomatoes, dill, and parsley
• Toss lightly



4. Dress It Simply
• Drizzle with lemon juice + olive oil
• Season with salt + pepper
• Toss gently
