ONE-POT MACARONI CHEESEBURGER SOUP (No Velveeta)
Ingredients
• 1 lb ground beef
• 8 oz elbow macaroni
• 8 oz sharp cheddar, shredded
• 1 cup onion, diced
• 1 cup carrots, sliced
• 1 cup celery, sliced
• 6 tbsp butter
• 5 cloves garlic, minced
• 4 tbsp flour
• 8 cups chicken broth
• 1 cup heavy cream
• 2 tsp dried thyme
• 2 tsp dried oregano
• 1 tsp white balsamic
• Salt and pepper
How I Make It
➊ Brown beef with herbs, salt, and pepper. Set aside.
➋ In the same pot, sauté onion, carrots, and celery in butter.
➌ Stir in garlic and flour. Cook briefly.
➍ Add broth and macaroni. Simmer until pasta is tender.
➎ Remove from heat. Stir in cream, cheddar, vinegar, and beef.
Thick, cozy, and filling.
