Ingredients
For the Honey Butter:
1/2 cup
(1 stick) unsalted butter, at room temperature
2 Tbsp.
pure honey
Kosher salt
For the Cornbread:
1/2 cup
(1 stick) unsalted butter, melted and cooled slightly, plus more for pan
1 cup
all-purpose flour, spooned and leveled
1 cup
cornmeal
1 tsp.
baking powder
1/2 tsp.
baking soda
1/2 tsp.
kosher salt
1 cup
buttermilk
2
large eggs
3 Tbsp.
pure honey or sugar
Directions:
1. Make the honey butter: Stir together butter, honey, and salt in a bowl with a fork until well combined. Cover and refrigerate until firm, at least 30 minutes.
2. Make the cornbread: Preheat oven to 350°F. Butter a 10-inch cast-iron skillet. Whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt in a bowl. Whisk together butter, buttermilk, eggs, and honey in a separate bowl. Add wet ingredients to dry ingredients and stir just until combined. Transfer to prepared pan.
3. Bake until toothpick inserted in center comes out clean, 22 to 25 minutes. Cool in pan 10 minutes.
Serve warm with honey butter alongside
