To the residents at Merritt Island,

We are aware that we've had challenges the last few days with the west elevator. We've had repair people on site to try to repair, however with no success. The attempt to replace the part failed, now we’re looking at next steps. While we work through this, please know that the Lenox team and elevator team are working to find solutions as quickly as possible, even as far as trying to get the east elevator In the meantime, please call the front desk if you need a meal(s), and our team will be sure to deliver them to you. Please refrain from calling the fire department to bring you down to meals while we work through this.

The other evening the Lenox at Merritt Island hosted another monthly Chef’s Table Event Featuring one of our Chef’s, Chef Bobby. He and the dining team cooked a fabulous culinary event with Steamed Clams, Bobby’s Famous Pasta Salad, Whole Main Lobster w/Polenta Cakes, Fava Beans, and a Triple Chocolate Mousse Cake. No Leftovers this time, but everyone had plenty!

Every month our residents look forward to this event, and is attracting many of our residents that haven’t tried our dining experience before. It also gives our dining team a chance to get creative and do something totally different than breakfast, lunch, and dinner.

This will be a regular monthly event at the Lenox, and is by reservation only. Contact the Culinary Department for Reservations and Pricing. Sign up early, don’t be late!!

The other evening the Lenox at Merritt Island hosted another monthly Chef’s Table Event Featuring one of our Chef, Chef Will. He and the dining team cooked a fabulous culinary event with Crab Stuffed Mushrooms, Watermelon Feta & Mint Salad w/Balsamic Glaze, Crab Legs, Roasted Corn on the Cob & Potatoes, and Mixed Berry Custard. There was even a lot of crab for the residents to take home with them.

On Wednesday July 2nd, the Lenox at Merritt Island held a “Poolside BBQ” for its residents, from 3 to 6 PM with District Manager Tom Sutton taking care of the grill duties. However, you know what they say, the best laid plans…..at about 2:45 PM, we were met with torrential rains and tropical force winds which quickly put an end to the poolside event. Not So! Our culinary team sprung into action, and prepared the burgers and dogs with all the fixings, and a good time was had by all for an “Indoor” 4th of July event. See all the happy faces!! Delish!!

We had our first ever Chef’s Table Dining event at the Lenox at Merritt Island! The Chef’s table is going to be a regular event at The Lenox, offering a different alternative to our normal everyday dining services. This gives our residents the opportunity to see the creativity and skill set of our culinary team. Last night was Chef Eric’s menu consisting of a Shrimp Cocktail Appetizer, followed by an amazing Lobster Bisque. For the entrée, Chef Eric prepared a New York Strip Steak (cooked to order) with a Peppercorn Demi-glace, Twice Baked Potatoes, and Bacon Wrapped Asparagus. To finish the meal the Dessert was a delectable Peanut Butter Brownie Cake.
