LUSCIOUS LEMON-LIME CHERRY PISTACHIO CHEESECAKE
Ingredients:
* 1½ cups graham cracker crumbs
* 1/4 cup sugar
* 1/2 cup butter, melted
* 24 oz cream cheese, softened
* 1 cup sugar
* 1 tsp vanilla
* 3 eggs
* 1/4 cup lemon juice
* 1/4 cup lime juice
* 1 tbsp lemon zest
* 1 tbsp lime zest
* 1/2 cup chopped pistachios
* 1/2 cup chopped cherries
* Whipped cream, whole cherries, and extra pistachios for topping
Directions:
1. Preheat oven to 325°F. Mix graham crumbs, sugar, and melted butter, then press into a greased 9-inch springform pan and bake for 10 minutes.
2. Beat cream cheese and sugar until smooth, then mix in vanilla and eggs one at a time.
3. Add lemon juice, lime juice, lemon zest, and lime zest, then fold in chopped pistachios and cherries.
4. Pour into the crust and bake for 50 to 60 minutes, until the center is almost set.
5. Turn off the oven, crack the door, and let cool inside for 1 hour, then chill at least 4 hours or overnight.
6. Top with whipped cream, whole cherries, and chopped pistachios before serving.
