Dwayne Collins began his career in the Restaurant Industry many years ago starting in Oslo, Norway, where he managed Café de Paris, the popular bar and lounge. It was at Café de Paris that he learned all about the culinary industry and the complexity of the business. His love of travel then took him to the Far East, and specifically to the California Bar and Grill in Hong Kong. In returning t

o New York and became associated with some of the city’s finest dining establishments, including Aquavit, Claude Trosgrois, “CT”, Cena, “AZ”, Artisanal and BLT Restaurant Group. As the General Manager of the renowned restaurateur Jean Georges, Dwayne was employed as the general manager of both “66” and Service Director at the Mercer Kitchen at the acclaimed Mercer Hotel. As his loyalty grew with Jean Georges Restaurant Group, in 2006, Dwayne was offered a once - in - a lifetime experience at the One and Only Ocean Club, as the general manager at Dune on Paradise Island, Nassau, Bahamas. In January 2007, Dwayne move to Miami and met renowned South Florida restaurateur David Manero, co-owner and partner in the newly launched celebrity restaurant DeVito South Beach, located on the infamous Ocean Drive in Miami Beach. Dwayne was responsible for the overall operations and day-to-day management of the restaurant as well as recruitment, training, polices and procedures, press and publicity management and celebrity/VIP relations.
