When was the last time you prepared a sumptuous ๐๐๐ฟ๐ธ๐ฒ๐ ๐ฐ๐ต๐ถ๐น๐ถ? Iโm never tired of making this delicious meal. Itโs healthy, tasty, and has just the right amount of everything that I consider the "perfect meal".

1 TB Vegetable Oil
2 TB Tomato Paste
2 TB Chili Powder
1 ts Ground Cumin
1 Green Pepper Roughly Chopped
5 Scallions, Sliced (white and green parts)
Kosher Salt
1 LB Ground Turkey
1 28 oz Can Low sodium Diced Fire Roasted Tomatoes
2 C Low Sodium Chicken Broth
1 15 oz Can Black Beans, drained
Sour Cream and Shredded Cheddar for Garnish

Heat the vegetable oil in a large pot over medium high heat. Add the tomato paste, chili powder, and cumin. Cook stirring until the mixture darkens, about 1 minute. Add 1/2 C water, the bell pepper, scallion whites and 1 ts salt. Cook until the pepper is crisp tender, about 4 minutes. Add the turkey and cook, breaking up the meat with a wooden spoon, until cooked through, about 4 minutes.
Stir the tomatoes, chicken broth, and beans into the pot; bring to a simmer. Partially cover and cook, stirring occasionally until thickened, 10 to 12 minutes. Stir in all but a few of the scallion greens and season with salt. If desired, top with cheddar, sour cream, and remaining scallions.
