This is the perfect summer salad!
Peach, Fig, and Arugula Salad with Spicy Lemon Honey Vinaigrette
First, prepare the vinaigrette: Combine one garlic clove, minced, lemon juice from 1 lemon, 2 tbsp. honey, 1 tbsp. sriracha, and salt in a lidded jar. Add ¾ c. olive oil and shake well until incorporated.
Next, assemble the salad: Spread arugula on a large platter and add sliced peaches, figs, dates, and shallots and toss with about 2 tbsp. of the vinaigrette.
