✨ 🌧️“When rainy and cold, cook!” I made this….

Beet Crostata with Agrodolce

3 medium beets red and yellow, I only had red
4 tbs. olive oil
One store bought pie crust from 14.1 oz carton
One 5.2 oz garlic-herb cheese
1 tbs grated pecorino
4 fresh time sprigs
Flaky sea salt
egg

-Bake beets in tin foil for 1 hour at 400 degrees. Let cool, peel and slice in ¼ inch slices
-open the pie crust on parchment on a flat baking sheet, you can thin it out if you want or leave it . Smear the garlic herb cheese leaving an inch of crust, dust with pecorino and pour a bit of oil, layer cooked beats around evenly overlapping, add a bit more oil and more pecorino, add sprigs of Thyme. Fold the 1 inch of exposed crust over the beets. Take egg beaten with one tablespoon of water and wash over the rim of the crust. Bake for 20-25 minutes at 400 degrees.

Once slightly cooled, spoon a couple of tablespoons of the Agrodolce over the beets, crush up about 10 pistachio nuts and sprinkle on top, serve

Agrodolce
Equal parts honey, white wine vinegar and a hot pepper or a tablespoon of pepper jelly. Heat in small sauce pan until most of the liquid evaporates, remove from stove and it will be syrup consistency.

Wine pairing
Agrodolce sauce originating from Northern Italy it is sweet and sour at the same time, try a white wine from the Dolomite region (Pinot Bianco or Sylvaner)
