Keto Chicken Hot Pie

Ingredients
2 cups cooked chicken, shredded
4 oz cream cheese, softened
1/2 cup heavy cream
1/2 cup peas and carrots, low carb
1/4 cup onion, chopped
2 tbsp butter
2 cloves garlic, minced
1/2 cup almond flour
1/2 cup shredded cheddar cheese
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried thyme
Optional Topping
Extra 1/4 cup shredded cheese
Method
Preheat oven to 375°F / 190°C. Grease a medium baking dish.
In a skillet, melt butter over medium heat. Add onion and garlic, then sauté until soft.
Stir in cream cheese and heavy cream until smooth. Add almond flour, salt, black pepper, and dried thyme. Cook until thickened.
Add chicken, peas, carrots, and cheddar cheese. Stir until well combined and creamy.
Pour the mixture into the prepared baking dish and spread evenly.
Top with extra shredded cheese, if using.
Bake for 20–25 minutes, or until golden and bubbly.
Let cool for 5 minutes before serving.
