I know watching the weather, boring...
But not lately. Malibu appears to be out of the woods but may get a twofer with a downpour.

Here, in the wet PNW? A lot of warm rain is heading our way. A pineapple express or two.

This will change. Going back to the "boring" point...
The current weather pattern is rather chaotic and more than 24hrs out is a guess. 72 hrs out...not even close.

Ok, the final cook down on the cranberry sauce in place. Soon, off the low cook into the chiller. Hey, this is Thanksgiving...best cook required. :)
The spices will finish nicely.

The final 4 cups cooling. Started with 8 cups before reducing, processing and re-cooking down. Sauces; take time but worth the effort. ;)

After the first cook, the cranberry sauce was way too 'agro' and the 'dulce' was a back note. Also the cranberry skins were not pleasant.
Step two: the mix is pureed in the food processor and then back on the stove with a cup of rum and a half cup of sugar to help the 'dulce' component.
Already improved. The texture is velvet instead of skins caught in teeth. ;)

The sour is now balanced against the sweet. The rum balanced out the bitter from the bourbon.
