We are truly overwhelmed by the love, support, and excitement we’ve received throughout this journey. Every day, we see new faces joining our page, cheering us on, and sharing in our excitement as we get closer to opening our doors.

We thought this would be the perfect time to share the story behind the name Uno MAZ and what it means to our family.

People often ask what inspired our name choice.

The name Uno MAZ is deeply personal to our family because it represents our past, our present, and the future we are building together.

Uno MAZ symbolizes “One More.” One more bite, one more drink, one more memory, and one more seat at the table. We wanted a name that reflected the feeling we hope every guest experiences when they visit us a place that brings people together and makes them want to stay a little longer for one more.

The “MAZ” also holds a special meaning for our family. The letters represent our three children. M for our oldest, A for our middle child, and Z for our youngest. They are the reason behind every sacrifice, every challenge we’ve overcome, and every dream we’ve dared to chase. Everything we are building today is rooted in the hope of creating something meaningful for their future.

This story begins long before Uno MAZ.

My husband’s father and his partners dedicated generations of their life to the restaurant previously known as La Fuente. Through hard work, perseverance, and a love for serving their community. He built a place where families gathered, friendships were made, and memories were created around the table. When the time came, he passed the torch to the next generation, entrusting us with the opportunity to continue that tradition of hospitality and community.

At the same time, my own father’s journey helped shape the dream that became Uno MAZ. After coming to the United States, his very first job was in the very building where we are now opening our restaurant. He later spent 31 years at a restaurant in Redmond previously know as El Toreador. Working as a chef, dedicating his life to his craft and serving others through food. When the restaurant he worked at closed its doors in 2025, we saw an opportunity to take a leap of faith together and build something of our own.

For us, Uno MAZ represents one more opportunity. One more chance to honor the sacrifices of the generations before us. One more chance to build something for our children. One more chance to bring people together through food, family, and community.

Uno MAZ is more than a restaurant name. It is the story of family, legacy, hard work, and faith. It is a tribute to those who came before us, the children who inspire us every day, and the community that has supported us along the way.

Thank you for being part of our journey. We can’t wait to welcome you to this next chapter, share our story, and create new memories together.
