A little something different from my kitchen today! ❤️

Since so many of you enjoyed my chicken salad post, I thought I’d share another easy favorite — this homemade Mexican casserole. It turned out so good and was a perfect way to use leftover taco meat!

It’s simple, hearty, and full of flavor.

Easy Mexican Casserole Recipe

Ingredients:

* 1 box Spanish rice, cooked
* Leftover taco meat
* 1 can black beans, drained
* 1 can corn, drained
* 1 can cream of mushroom soup
* Pickled jalapeños
* A little jalapeño juice for extra flavor
* Mozzarella cheese
* Mexican shredded cheese

Directions:

1. Prepare the Spanish rice according to the package directions.
2. In a baking dish, mix together Cream of mushroom soup, Spanish rice, taco meat, black beans, corn, and jalapeños.
3. Pour in a little jalapeño juice for extra moisture and flavor.
4. Top with mozzarella cheese and Mexican shredded cheese.
5. Bake until heated through and the cheese is melted and bubbly.

It’s easy, delicious, and a great way to turn leftovers into something special!

And of course, if I can help with your real estate needs, I’m always here.

Just sharing something delicious today! 😋

I made a homemade chicken salad that turned out so good — sweet, savory, and just a little bit zesty. The crushed pineapple gives it a touch of sweetness, and the pickled jalapeños add the perfect little kick! It would be so good on croissants, crackers, or just by itself.

Sometimes it’s fun to share a little more than real estate and let people see a favorite from my kitchen too. If you try it, let me know what you think! recipe in comments.
