If it makes you happy, then it can't be that bad!

I love making fresh salsa.

3lbs of tomatoes hand diced small (you can cheat this with a blender or food processor but it will get a bit watery and the joy of this salsa is all the uniform look.)

5 large garlic cloves minced

1 large white onion or Spanish onion (not sweet or Vidalia).

3 to 5 jalapenos with the seed and rib removed, julianned then minced.

1 large fist full of cilantro, washed and fine chopped.

A tea spoon of cumin (more to taste if needed).

2 tablespoons of salt.

The juice of 2 limes.

1/4 cup of red wine vinegar.

A few dashed of to***co sauce.

A few grinds of black pepper.

Mix well and taste. It's delicious and ready to go and flavors will continue to grow the longer it sits so don't over do it on the salt, garlic or lime juice.

I pack mine into mason jars and stick them in the fridge. It doesn't last more than 2 weeks in my house.
