Fun fact: Zion National Park is just a 2 hour drive from Las Vegas! Many people don't realize how accessible this national park is. While it feels very rugged and remote, it's one of the most easily reachable of the parks, especially with inexpensive flights into Vegas. And, along the way you can stop in Mesquite, St. George or Hurricane to load up on food and drinks and/or take a side trip to Valley of Fire State park or Snow Canyon State park. All of which are easily access off the 15 freeway.
