Beat the heat this summer with this hydrating, nutrient-packed Cucumber & Berry Salad
Ingredients:
-1 cup of mixed berries (strawberries, blueberries, raspberries)
-1 medium cucumber, thinly sliced
-1 tablespoon fresh mint, chopped
-1 tablespoon honey or agave1 tablespoon lime juice
Optional proteins: Grilled chicken, tofu, Greek yogurt, quinoa, cottage cheese, chickpeas, or smoked salmon
Instructions:
1. In a bowl, combine the mixed berries and sliced cucumber.
2. Add the chopped mint, honey/agave, and lime juice.
3. Toss gently to combine and chill for 10 minutes before serving.
4. Top with your favorite protein option for an extra boost!
