Cranberry Bliss Bars

Cranberry Bliss Bars

This combo is a perfect finish to a plant based Thanksgiving or a great in-between snack to satisfy a sweet tooth and also deliver some protein.

For the crust:
1 1/2 cups raw macadamia nuts (soaked)
1/2 cup coconut shreds (soaked)
2 tbsp coconut butter
1 tbsp maca root (optional)
4 tbsp raw agave or other raw sweetener
1 pinch sea salt

For the topping:
1 cup cranberries
2 tbsp orange juice
1 tsp cinnamon
Plus 2-3 tbsp orange zest

In a food processor with the s blade attachment on place process all crust ingredients until a thick dough mix is ready. Press this evenly into an 8x8 pan and then prepare the topping.

Also in the food processor add the topping ingredients and pulse until well combined. Spread the topping over the crust and chill in the freezer 1 hour to set. Cut into bars and enjoy!
