Lockhart might be the holy land of BBQ, but Seguin is the Vatican City. We made a trip to see the Pope of BBQ and Super Dave today and nothing was getting in our way. Through heavy rains and street flooding we braved the line and enjoyed the Michelin Star restaurant The Burnt Bean Co. Ernest Servantes and Dave Kirkland are # 1 on the Texas Monthly BBQ top 50 and with good reason. I have been here before and it was the best I’ve had and I’ve had a lot of BBQ around Texas. Today I had brisket, a smoked bone in pork chop and El Cinco( poblano and pepper jack) sausage. The brisket is still the best I’ve had. The sausage was amazing and man that pork chop was divine. Very tender and juicy. Our sides were the poblano cheesy squash, Hot Cheeto Mac and cheese and Cowboy beans. The squash is my favorite side and was better this time than last. The Cowboy beans were on point and the Mac and cheese was nice and creamy. I of course had a Big Red and a free Yuengling beer. I finished it all off with one of the best desserts you can get. The peach bourbon cobbler taco. It comes with cinnamon ice cream and a pie dough taco shell. If you want some of the best BBQ in Texas ( the world) then you need to get in line early. They open at 11.
