🥔🧀✨ Sweet Potato Rounds with Goat Cheese & Cranberries 🥔🧀✨
Ingredients:

2 large sweet potatoes, sliced into ¼-inch rounds
2 tablespoons olive oil
Salt and pepper to taste
4 oz goat cheese, softened
½ cup dried cranberries
2 tablespoons honey (optional)
Fresh thyme leaves for garnish
Balsamic glaze for drizzling
Flavor:
The sweet, caramelized flavor of roasted sweet potatoes pairs beautifully with creamy goat cheese, tart cranberries, and a tangy balsamic glaze.

Crispy sweet potato rounds topped with creamy goat cheese and chewy cranberries.

Directions:

Prep and Roast the Sweet Potatoes:
Preheat your oven to 425°F (220°C). Arrange the sweet potato rounds on a baking sheet and brush both sides with olive oil. Season with salt and pepper. Roast in the preheated oven for 20-25 minutes, flipping halfway, until the sweet potatoes are golden and tender.

Add the Toppings:
Remove the sweet potatoes from the oven. While still warm, spread a small amount of goat cheese on each round. Top with a few dried cranberries.

Drizzle and Garnish:
Drizzle the rounds with honey (if using) and a light drizzle of balsamic glaze. Sprinkle with fresh thyme leaves.
