To demonstrate the effects of a water bath on desserts, we prepared two identical cheesecakes and baked one directly on the rack and the other one in a water bath, both in a 325-degree oven. Both cheesecakes were removed from the oven when their center reached 147-degrees.

"DO NOT MAKE EYE CONTACT WITH THE CAT!"
An interesting day yesterday out with a young first time home buyer showing her what Pittsburgh has to offer and learning her likes and dislikes. We encountered this attic room which immediately brought up memories of Alfred Hitchcock's "Psycho". There was no way I was getting near that chair!
In another house there were strict instructions not to let the cat out. A big tiger cat was perched on the edge of the couch checking us out as we entered. I love cats and most take to me right away. This one appeared in nearly every room we visited with friendly meows. We had a busy schedule so no time to stop for a pet. It wasn't until I was going about turning out lights that I noticed a large message in white chalk on the blackboard wall in the kitchen..."DO NOT MAKE EYE CONTACT WITH THE CAT!". As luck would have it, as I made a last lights out check upstairs, I went to reach for the switch in a bedroom and there was kitty rolling around on the back of a chair right below the switch. Having lived with a cute but temperamental cat with lightening fast claws, I carefully slid my hand around the door frame over to the switch with this huge feline taunting me to look him in the eye! Needless to say my heart was pounding as I crept back down the stairs, luckily exiting the house unscathed, Tiger securely locked in.
