How can it be that I made this surf and turf dinner and only got a picture of the salad⁉️ Maybe because this salad morphed into something I had no idea it would become. The guests had several dietary restrictions (no salt, no animal fats, no sugar, no gluten, no dairy) so it was a (fun?) challenge to make this quinoa salad marinated in lemon & garlic w toasted almonds, craisins, fresh cooked gold and red beets topped w balsamic glaze and just a touch of goat cheese. It was a hit for evolving just moments before they arrived. So the fish caught by Malcolm and the beef raised by Clayton Cattle served w asparagus and butternut squash will have to be left to your imagination. It was full of fall colors!
