Fruity and festive—strawberry cheesecake bars are a February favorite!
Crust: 12 graham crackers, 1/4 cup sugar, 1/2 cup melted butter.
Filling: 16 oz cream cheese, 1/4 cup yogurt, 1 egg, 3 tbsp sugar, 1.5 tsp vanilla.
Topping: 1 cup chopped strawberries, 1 tbsp sugar, 1 tbsp lemon juice.
1. Preheat oven to 350°F, line an 8x8 pan with parchment.
2. Crust: Pulse graham crackers, sugar, and butter, then press into the pan.
3. Topping: Simmer strawberries, sugar, and lemon juice.
4. Filling: Mix cream cheese, yogurt, egg, sugar, and vanilla until smooth.
5. Spread filling onto crust, add topping, bake for 30 mins, chill for 1 hour.
