Tasty Tuesday!
This time of year our garden gives us a plethora of zucchini! You can always find a loaf of zucchini bread in our counter at all times! Something our family loves even better is Grandma Horst’s Zucchini Casserole. I admit, it does not sound good, but I promise, it will be a new family favorite! Give it a try and let me know what you think! We give Grandma Horst 5 stars!
Ground Beef Zucchini Casserole
-2lbs zucchini
-1 1/4 lb. ground beef
- 1 onion, chopped
-1 green pepper, chopped
-1 tsp salt
-dash of pepper
-1/2 lb of Velveeta
-1 can cream of mushroom
-1/2 cup buttered bread crumbs
Brown beef, onion, and green pepper until done. Season with salt and pepper. In casserole dish, layer (like lasagna) meat, sliced zucchini, sliced velveeta, undiluted cream of mushroom soup, and finally buttered bread crumbs. Bake at 350 for 25 minutes or until done.
Now, I cook more like my momma than my grandma.......I never stick to the recipe and measure. I probably use way more than the recipe calls......way more ground beef, cheese, soup, and def more bread crumbs! And like Paula Dean says, “ the more butter, the better!” So, I soak my crumbled bread in a stick of melted butter:) Literally, the icing on the cake! Oh.......and how can I forget the applesauce! You are not a true Horst unless you pour applesauce over it before you eat it! Perfection!!!
