Trust my vegan pals won't be terribly upset by the photo of Lois Williams Potratz but she hand-trimmed these chicken thighs, along with slicing, chopping, pealing, and dredging pounds and pounds of radishes, onions, carrots, bread for French Toast, pached 250 eggs, etc., etc. She was volunteering hours of her time this past week in preparation for the 300-person fundraiser yesterday on behalf of Wilmington's Girls Leadership Academy (G.L.O.W. ). https://www.glowacademy.net/

Celebrity Chef Bobby Flay was in town to lead the efforts, and like so many who know about GLOW, came away deeply impressed by its mission and above all the young women and their teachers. Lois came home exhausted every evening since Monday, but she greatly enjoyed the experience...and has an even greater respect for those in the restaurant business. I'm pretty sure she won't be forgoing her Real Estate business for running a working kitchen. [Note: Rumors Chef Bobby was seen taking notes at her side in the kitchen have so far proven unfounded]

My first post in quite a while, but I do briefly check in from time to time. Happy to have been able to follow everyone's posts and photos. I've not been very socially active, or active period. I remain upbeat (most hrs of the day anyhow), positive and continue to garden and beautiful our yard...which is a challenge given my inherited Brown Thumb (can't blame it on me of course). I also remain committed to serving on the board of Coastal Horizons Center and above all my family. Life's good and trust it is with you all as well.

A little over a year ago ....we were chosen to be the next "Parents" to Archie. He was 4 months old and we were his 3rd home. His previous owners all had good intentions and gave him loving homes....but it was never quite the right fit. Well he fi has fit right in here here! We adore the little guy and yes,,,my carpets are ruined and yes! ..he might have eaten par tof the couch. And yes....he makes us laugh every day and is a word class snuggler. Our other "Rescue" Maggie love the little guy as do do out other grand puppies.

A quick pan sauté…. Scallops, salt and pepper, a little olive oil, 3 mins and flip over. Add 2 tbl butter and fresh herbs. I added sage and thyme. Cook about 3 mins till browned. Plate and spoon butter herb sauce over. The herbs will be browned and crispy and delicious! Served with Israeli Cous Cous, sliced fresh tomatoes and roasted asparagus….Squeeze of lemon. Enjoy!
