Trust my vegan pals won't be terribly upset by the photo of Lois Williams Potratz but she hand-trimmed these chicken thighs, along with slicing, chopping, pealing, and dredging pounds and pounds of radishes, onions, carrots, bread for French Toast, pached 250 eggs, etc., etc. She was volunteering hours of her time this past week in preparation for the 300-person fundraiser yesterday on behalf of Wilmington's Girls Leadership Academy (G.L.O.W. ). https://www.glowacademy.net/
Celebrity Chef Bobby Flay was in town to lead the efforts, and like so many who know about GLOW, came away deeply impressed by its mission and above all the young women and their teachers. Lois came home exhausted every evening since Monday, but she greatly enjoyed the experience...and has an even greater respect for those in the restaurant business. I'm pretty sure she won't be forgoing her Real Estate business for running a working kitchen. [Note: Rumors Chef Bobby was seen taking notes at her side in the kitchen have so far proven unfounded]
