From swamp to main road: the Tamiami Trail is a 284‑mile highway that began as an idea in 1915 and opened in 1928 to connect Tampa and Miami across the Everglades. Engineered through mud, snakes, and dynamite blasts, it transformed South Florida tourism, settlement, and Seminole/Miccosukee trade routes, while also disrupting Everglades water flow that is now being restored. Today, U.S. 41’s southern stretch—still called the Tamiami Trail—remains a historic backbone of Florida road travel.

Most people hear “celiac disease” and think it just means I can’t eat bread.

I wish it were that simple.

Celiac disease is an autoimmune disorder where gluten exposure causes my immune system to attack my own small intestine. It’s not a preference, a diet trend, or a stomach ache after pizza. Even trace amounts of gluten can trigger inflammation, nutrient deficiencies, neurological symptoms, fatigue, and long-term health complications.

It affects where I eat, how I travel, social events, holidays, work, and countless daily decisions that most people never have to think twice about.

Some days I look completely fine while feeling anything but.
