What does a cheesesteak look like when a fine-dining team builds it from the ground up?
That's exactly what Matu Cheesesteaks is doing in Calabasas.
It starts with a heavily sesame-seeded roll that brings real texture and structural integrity, then Cooper cheddar, a long hot pepper down the middle, and their Wagyu steak.
The beef is cooked properly, well but not chewy or overdone, the onions are caramelized without disintegrating, and that pepper cuts right through all the savory, umami richness.
This was a long-awaited opening, and it delivers. And shout out to Chef Scott! It was great chatting π
