In a market with limited inventory, patience, perseverance and a sense of humor are key. After a year long search riddled with multiple attempts, the reward feels even sweeter when you snag a fabulous unit in the building you first fell in love with. Congrats to JM on her new adventure!

I've been making these potatoes for about a decade now, and they are the starchy star of every Thanksgiving celebration I attend. The best part about them (other than being delicious) is you can make them ahead of time, so they are perfect to bring to someone else's house, and one less thing you have to do day of.

INGREDIENTS:
3 lbs Yukon Gold potatoes
1/2 + 3/4 tsp salt
2 + 1 tablespoons butter
6 oz cream cheese
3/4 cup sour cream (full fat, duh)
1/4 cup milk
1/2 teaspoon paprika (optional)

DIRECTIONS:
1. Peel potatoes and bring large pot of water to a boil. Salt water with 1/2 tsp salt and add potatoes. Cover pot and simmer over medium heat for about 25 minutes or until tender. Drain potatoes.
2. Put potatoes in a large mixing bowl and mash with a potato masher.
3. Add 2 tablespoons butter, cream cheese, sour cream, and 3/4 tsp salt and mix very well, until all the ingredients are blended evenly.
4. Spoon mixture into 12X8X2 in baking dish
5. Melt the one remaining tablespoon of butter, and brush over top of potatoes, and sprinkle with paprika, if using (very optional, if you have some, great, if not, doesn't matter)

If making ahead, cover and refrigerate. When it's time to make the magic happen, let potatoes come to room temperature, and preheat oven to 350F. Bake uncovered for 30 minutes or until hot.

Serves 8-10 people
