I've been waiting for this for 10 years. Now I'm on the hunt for the best soupe de l'ongion in Paris. This one at La select was good but tastes like a chicken base. I'm searching for something dark and mysterious with a bit more thyme.
I make a mean "French" onion soup and I know it's different every time. I'll keep you posted.
